Cauliflower Stir Fry with Steak

* You can purchase cauliflower pearls in most stores. Otherwise to prepare pearled cauliflower at home: Cut 1 large head of cauliflower into rough pieces. Place into food processor and pulse until the cauliflower resembles small pearls. If you do not have a food processor, you can grait large pieces of cauliflower head using a standard box graiter.
Bonus! Using the box graiter method should definitely qualify as a work out!


Ingredients:
16oz cauliflower pearls
2T olive oil
8oz Skirt steak, cut into strips (1/2 inch width)
2 garlic cloves, minced
1 Zucchini, cut into strips (1/4 inch thick)
4-6 oz baby Bella mushrooms, sliced
3T low sodium soy sauce
3 dashes Worcestershire
1/2 cup Low sodium beef broth
1T corn starch
3T chives, chopped


Directions:
Place pearled cauliflower rice in microwave dish, cover, and microwave for 5 minutes or until tender. No need to add liquid.

Heat 1T olive oil In a large sauté pan. Add steak strips and cook for 8 minutes, turning occasionally.  Remove Steak from pan and set aside. Do not clean pan as drippings will be used for sauce.

In this same large pan,  heat 1T olive oil. Add garlic and cook until brown and fragrant. Add mushrooms (do not crowd) and cook 2-3 minutes on medium heat. Add zuchini to pan and cook for 7-8 minutes until tender. Add Worcestershire and soy sauce to veggies and sauté on low-medium heat for 2 minutes. Next, move zucchini and mushrooms to sides of pan, keeping heat on medium.

Combine beef broth and corn starch in measuring cup until thoroughly mixed together. there should not be any large clumps of cornstarch visible. Slowly add the cornstarch/broth mixture to open space you created in sauté pan, stirring constantly and gently scraping bottom of pan to free drippings. Stir until thickened, about 2-3 minutes. Add steak and cauliflower to Sauté pan and mix all ingredients together with sauce. Turn heat to low and let sit for 3-4 minutes until sauce fully thickens.

Garnish with chopped chives and serve.
