Fall Apple & Pear Salad with Yogurt Dressing

This recipe tastes just like Fall. It’s a perfect way to satisfy your sweet tooth without feeling bad about it. I used Siggi's Icelandic yogurt which gave it more of a creamy texture but Greek yogurt will also work well. You can choose to peel or not peel your fruit. I decided to leave the fruit unpeeled to increase the fiber content.
Feel free to substitute any nut, like walnuts or almonds, instead of pecans. My husband's sweet family had given us a huge bag of pecans from their farm so I wanted to put those to good use.

Ingredients:

2 bartlett pears, roughly chopped
2 gala red apples, roughly chopped
1 cup Red grapes, halved
3/4 cup chopped pecans

Dressing:
4oz low fat plain Greek or Icelandic yogurt
2T honey
1T lemon juice
1/2t vanilla extract
1/2t cinnamon
1/4t nutmeg

Directions:

Combine chopped apples and pears in a medium mixing bowl. Gently fold in grapes and pecans.

To make Dressing:
Combine yogurt, honey, lemon juice, vanilla extract, cinnamon, and nutmeg in small bowl. Mix until thoroughly combined.

Drizzle over fruit and gently combine until the fruit is coated with dressing. Serve cold.

*  If prepared more than 6 hours before serving, recommend do not combine dressing and pecans until just prior to serving. You may add lemon juice to cut up fruit to keep from browning.
