Grilled Vegetables

Ingredients:
1/2 of a Medium Zucchini
1/2 pound Fingerling Potatoes
1Tomato
3 Cloves Garlic
2T Olive Oil
1T Fresh Rosemary
1T Chopped Chives
Pinch of Salt
1t Black Pepper

Directions:
Chop Fingerling potatoes into similar sized pieces. Slice zucchini into 1/4 inch thick slices. Chop tomato. In a mixing bowl, Combine chopped potatoes, tomato, and zucchini along with olive oil, rosemary, chives, salt, and pepper until each vegetable piece is coated.

If preparing ahead of time, you may combine ingredients ina resealable bag to use later.

If cooking on grill, create a bowl shape using tin foil and spread the vegetables evenly onto tin foil. Cover with tinfoil and grill for 20 minutes or until vegetables are tender.
