Hearty Chicken Soup

1 tablespoon olive oil
1 Yellow Onion, diced
3 cloves minced garlic
4 carrots, chopped
3 celery stalks, chopped
3 medium tomatoes, chopped
3 cups pulled chicken
1T dried parsley 
1/2T dried oregano
1/2T thyme
3 cups chicken broth
1 Cup water
Salt and pepper, to taste

Heat olive oil over medium heat in a large stock pot. Add onion, garlic, carrots, celery and saute for 5 minutes. Add tomatoes, chicken, broth, water and brring to a boil. Add parsley, oregano, and thyme. Reduce to low heat and cook for 25 minutes uncovered.
