Lemon Mustard Pork Tenderloin

1 pork loin 


1/2 Cup lemon juice
4 cloves Garlic, Minced
1/2 Cup Dijon Mustard
1/2 Cup Whole grain mustard
1T Thyme
1/2 Cup Chicken stock

Place whole pork loin in resealable plastic bag. Add lemon juice, garlic, Dijon mustard, whole grain mustard, and Thyme to bag. Seal bag and gently massage marinade into pork loin. Place sealed bag in refrigerator and let marinade at least 12 hours. 

Pre heat Oven to 350 degrees. 

In a large, oven safe pan, brown marinated pork loin over medium-high heat. Brown 6 minutes on each side. 
Add 1/3 cup chicken stock to pan and transfer into oven to cook for a total of 40 minutes. 
After 20 minutes of cooking, gently turn pork loin over and add 1/4 cup chicken stock to pan. Cook for remaining time. To ensure Pork is cooked, use a meat thermometer in the thickest part of the meat. The temperature should be at least 140 degrees. 

Remove from oven. Let sit for 15 minutes then thinly slice pork. Serve with Mustard if desired.
