Mini Meatloaves  

Ingredients:
16oz Ground Turkey
1 Egg
1/4 cup Onion, Minced
1/3C Whole Grain Bread Crumbs (Italian)
1T Parsley
1/4 Cup Parmesan Cheese
2 Cups Tomato Pasta Sauce
1T Olive Oil
1/3 Cup Water

Directions:
In a large mixing bowl, add ground turkey, egg, onion, bread crumbs, parsley, parmesan cheese, and 1/3 Cup pasta sauce until thoroughly combined and uniform.

Shape the mixture into 5 oval loaves, flatten them slightly until 1.5 inches thick.

Heat olive oil in a large simmering pan at medium-low heat. Add loaves and slightly brown on each side, about 3 minutes each. Top each loaf with remaining pasta sauce. Next, add water to pan and cover for 15 minutes until fully cooked.

Serves 5 mini meatloaves.
