Shepherd's Pie

1 Cauliflower Head
1/3 Cup Parmesan
1T Olive Oil
4 Carrots, Diced
3 Stalks Celery, Diced
1/2 Onion, Chopped
1/2T Garlic Powder
2 Medium Tomatoes, Diced
1/3 Cup Tomato Sauce or Paste
1.25 Pounds 93% Lean Ground Beef
 
 
Preheat oven to 375 degrees.
 
Cut cauliflower head into large pieces and steam until tender using double-broil steamer.
 
Transfer steamed cauliflower pieces into blender. Add parmesan cheese and blend until smooth. Set aside.
 
Heat olive oil in a medium sauté pan. Sauté onion, celery, and carrots for 5 minutes. Add garlic powder and tomatoes and continue to cook for 8 minutes. Set vegetable mixture aside.
 
In a large pan, cook ground beef until slightly browned. Add and combine vegetable mixture along with tomato sauce.
 
Transfer ground beef/vegetable mixture to 9x13 baking dish. Using a rubber spatula, spread Cauliflower puree atop the beef/vegetable mixture. Bake, uncovered, for 20 minutes until cauliflower puree appears brown and firm.
